  • 240ml (1 cup) sweetened condensed milk
  • 2–3 tablespoons fresh lemon juice (roughly 1 lemon)

Lemon Icing:

  • 125g (1 cup) icing sugar, sifted
  • 2 tablespoons fresh lemon juice
  • Lemon zest, for decoration

Directions:

  1. Prepare the Base:
    • In a food processor, blitz the biscuits into fine crumbs.
    • In a large bowl, combine the crushed biscuits, desiccated coconut, and lemon zest.
    • Add the melted butter, sweetened condensed milk, and fresh lemon juice. Stir until well combined.
  2. Assemble:
    • Press the mixture into the base of a lined 20cm (8-inch) square baking pan. Use the back of a spoon to press it down evenly.
