  • 1 ⅔ cups boiling water
  • ⅓ cup olive oil
  • ⅓ cup lemon juice

  • 1 cup chopped fresh parsley
  • ¼ cup chopped fresh mint
  • 3 tomatoes, chopped
  • 1 cucumber, peeled, seeded, and chopped
  • 1 teaspoon salt
  • Ground black pepper, to taste

Directions:

  1. Place the bulgur in a large bowl. Pour the boiling water over it and stir. Cover the bowl and let it sit for about 15 minutes, or until the bulgur has absorbed the water and softened.
  2. Fluff the bulgur with a fork to separate the grains.
  3. In a separate bowl, whisk together the olive oil and lemon juice.
  4. Add the green onions, parsley, mint, tomatoes, cucumber, salt, and pepper to the bulgur.
  5. Pour the dressing over the mixture and toss until everything is well combined.
  6. Chill in the fridge for at least 30 minutes before serving to allow the flavors to meld.
