  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 6 grams (1 level tablespoon) espresso coffee powder, finely ground
  • 100 grams (2/3 cup) chocolate chips

For the Mascarpone Cream Frosting:

  • 240 ml (1 cup) thickened cream or heavy cream
  • 170 grams (2/3 cup) mascarpone cream
  • 1 teaspoon vanilla extract
  • 1–2 tablespoons cocoa powder

Directions for this Tiramisu Cookies

For the Cookies:

  1. Preheat Oven & Prepare Baking Sheet: Preheat your oven to 180°C (350°F). Line a baking sheet with parchment paper or a silicone baking mat.
  2. Cream the Butter and Sugars: In a large mixing bowl, beat together the softened butter, brown sugar, and caster sugar using an electric mixer until light and fluffy (about 2-3 minutes).
  3. Add Wet Ingredients: Beat in the vanilla extract and egg until well combined.
  4. Combine Dry Ingredients: In a separate bowl, whisk together the flour, baking soda, salt, and espresso powder. Gradually add this dry mixture to the wet ingredients, mixing until just combined.
  5. Fold in Chocolate Chips: Gently fold in the chocolate chips until evenly distributed.
