Sheet Pan Meals

Ingredients for this Sheet Pan Meals:

  • For the vegetables and salmon:
    • Cooking spray
    • 2 medium sweet potatoes, sliced into 1/4-inch wedges
    • 1 tablespoon olive oil
    • ½ teaspoon kosher salt, divided
    • ¼ teaspoon ground black pepper, divided
    • 5 cups broccoli florets
    • 4 (5 ounce) salmon fillets
    • 2 tablespoons everything bagel seasoning
  • For the sauce:
    • ¼ cup Dijon mustard
    • 2 tablespoons honey
    • ¼ teaspoon cayenne pepper
    • 2 teaspoons soy sauce

Directions:

  1. Preheat the oven to 400°F (200°C). Line a large sheet pan with parchment paper or lightly spray with cooking spray.
  2. Prepare the sweet potatoes: Arrange the sweet potato wedges on the sheet pan. Drizzle with olive oil and sprinkle with ¼ teaspoon salt and ⅛ teaspoon pepper. Toss to coat and spread them out evenly.
  3. Prepare the broccoli: Place the broccoli florets on the sheet pan around the sweet potatoes. Drizzle with a bit of olive oil and season with the remaining ¼ teaspoon salt and ⅛ teaspoon pepper. Toss to coat.
  4. Make the sauce: In a small bowl, whisk together Dijon mustard, honey, cayenne pepper, and soy sauce until smooth.
  5. Prepare the salmon: Rub the salmon fillets with the honey-Dijon sauce, ensuring they’re well-coated. Place the salmon fillets on the sheet pan, in the center or between the vegetables.
  6. Season the salmon: Sprinkle the everything bagel seasoning evenly over the top of each salmon fillet.
  7. Roast the sheet pan dinner: Place the sheet pan in the preheated oven. Roast for 20-25 minutes, or until the salmon is cooked through (internal temperature should reach 145°F) and the vegetables are tender and slightly caramelized. If needed, broil for an additional 2-3 minutes to crisp up the salmon.
  8. Serve: Remove from the oven and serve the salmon with roasted sweet potatoes and broccoli.
