  • 120ml (1/2 cup) full-fat Greek or natural yogurt
  • 210g (1 1/2 cups) plain or all-purpose flour, sifted
  • 2 tsp baking powder
  • 1/4 tsp salt
  • Zest of 1 large orange

For the Glaze:

  • 90g (3/4 cup) icing sugar, sifted
  • 65g (1/4 cup) fresh passionfruit pulp (approx. 2 passionfruits)

Instructions

  1. Preheat oven to 170°C (340°F). Grease and line a 9×5 inch loaf tin.
  2. In a large bowl, cream butter and sugar until light and fluffy.
  3. Add eggs one at a time, beating well after each. Stir in vanilla.
  4. Mix in passionfruit pulp, yogurt, and orange zest.
  5. In a separate bowl, whisk together flour, baking powder, and salt.
  6. Gently fold dry ingredients into the wet mixture until just combined.
  7. Pour the batter into the prepared tin and bake for 40–45 minutes, or until a skewer inserted comes out clean.
