Maple Pecan Cookies

Ingredients for this Maple Pecan Cookies:

  • 115 grams (1/2 cup or 1 stick) unsalted butter, cold (straight from the fridge)
  • 190 grams (1 cup) brown sugar
  • 2 teaspoons vanilla extract
  • 120 ml (1/2 cup) good quality maple syrup
  • 1 large egg
  • 280 grams (2 cups) plain flour (all-purpose flour)
  • 1 teaspoon baking soda
  • 1/4 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 85 grams (3/4 cup) pecans, roughly chopped
  • 150 grams (1 cup) good quality white chocolate, roughly chopped
  • Sea salt for sprinkling

Directions:

  1. Preheat the Oven: Preheat your oven to 180°C (350°F). Line two baking sheets with parchment paper.
  2. Cream the Butter and Sugar: In a large mixing bowl, beat together the cold butter and brown sugar until smooth and creamy. This can take about 2-3 minutes.
  3. Add Wet Ingredients: Mix in the vanilla extract, maple syrup, and egg until fully combined.
  4. Dry Ingredients: In a separate bowl, whisk together the plain flour, baking soda, cinnamon, and salt. Gradually add this to the wet mixture, mixing until just combined.
  5. Add Mix-ins: Stir in the chopped pecans and white chocolate.
  6. Scoop the Dough: Using a tablespoon or cookie scoop, drop dough balls (about 1.5 tablespoons each) onto the prepared baking sheets. Leave space between the cookies as they will spread slightly.
  7. Bake: Bake in the preheated oven for 8-10 minutes or until the edges are golden brown but the centers are still soft.
  8. Cool and Finish: Remove from the oven and let the cookies cool on the baking sheets for 5 minutes before transferring them to a wire rack to cool completely. Sprinkle a pinch of sea salt on top of each cookie while they are still warm.
