  • 1 tsp instant dried yeast
  • 60 ml (1/4 cup) full-fat or whole milk
  • 30 g (2 tbsp) unsalted butter, room temp
  • 35 g (2 tbsp) caster or granulated sugar
  • 1/4 tsp salt
  • 1 large egg
  • 245 g (1¾ cups) all-purpose flour, plus extra for dusting

Cinnamon Sugar Filling:

  • 30 g (2 tbsp) softened butter
  • 45 g (1/4 cup) brown sugar
  • 1½ tsp ground cinnamon

Cream Cheese Frosting:

  • 15 g (1 tbsp) softened butter
  • 150 g (3/4 cup) full-fat cream cheese, room temp
  • 60 g (1/2 cup) icing sugar, sifted
  • 1/2 tsp vanilla extract

Directions

  1. Activate Yeast
    Mix warm water and yeast in a small bowl. Let sit for 5–10 mins until foamy.
  2. Prepare Dough
    In a large bowl, whisk milk, butter, sugar, salt, and egg. Add yeast mix, then stir in flour gradually to form a soft dough. Knead on a floured surface for 5–6 mins until smooth.
  3. Let Rise
    Transfer dough to a greased bowl, cover, and let rise in a warm spot for about 1 hour, or until doubled.
  4. Make Filling
    In a small bowl, mix softened butter, brown sugar, and cinnamon.
  5. Shape Rolls
    Roll dough into a 20×25 cm rectangle. Spread filling evenly. Roll tightly and slice into 6 pieces.
  6. Second Rise
    Place rolls in a greased 20 cm baking dish. Cover and let rise for 20–30 mins. Preheat oven to 175°C (350°F).
