  • 2 cups vegetable juice from concentrate (such as Red Gold)
  • 1 ½ cups instant rice
  • 1 cup shredded mozzarella cheese

Directions

  1. In a large skillet over medium heat, cook the Italian sausage until browned and crumbled. Drain any excess fat.
  2. Add chopped green bell pepper and onion to the skillet. Sauté for 4–5 minutes, or until tender.
  3. Stir in the diced tomatoes with their juice and the vegetable juice. Bring to a boil.
