Arugula Salad Recipe

Ingredients for this Arugula Salad Recipe:

  • 2 tablespoons extra-virgin olive oil
  • 2 tablespoons red wine vinegar (or rosé vinegar)
  • 3/4 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 1/2 cups red cherry tomatoes, halved
  • 1 1/2 cups yellow cherry tomatoes, halved
  • 1 (5-ounce package) arugula
  • 3/4 cup fresh basil leaves
  • 2 nectarines, sliced
  • 1 large white peach, sliced
  • 1 cup Rainier or other yellow-flesh cherries, pitted and halved

Directions:

  1. In a small bowl, whisk together the extra-virgin olive oil, red wine vinegar, salt, and black pepper to create the dressing. Set aside.
  2. In a large mixing bowl, combine the red and yellow cherry tomatoes and arugula. Gently toss to combine.
  3. Add the nectarines, white peach, and Rainier cherries to the bowl with the arugula and tomatoes. Toss gently to mix, being careful not to break the fruit slices.
  4. Tear the fresh basil leaves and scatter them over the salad.
  5. Drizzle the dressing evenly over the salad and toss gently to coat the ingredients with the dressing.
  6. Finish with a sprinkle of flaky sea salt before serving.
