Tacos:

  • 24 (6-inch) corn tortillas
  • Cooking spray
  • 2 lbs fresh salmon
  • 1 small head cabbage, shredded
  • 3 avocados, sliced
  • 2 limes, cut into wedges
  • Remaining ½ bunch cilantro, chopped (for garnish)

Directions

  1. Make the Mango Salsa:
    In a mixing bowl, combine mangoes, peaches, poblano peppers, red onion, lime juice, and cilantro. Chill until ready to serve.
  2. Prepare the Creamy Sauce:
    In a small bowl, whisk sour cream, mayonnaise, ketchup, cayenne, salt, and pepper until smooth. Keep refrigerated.
  3. Grill the Salmon:
    Preheat a grill or skillet over medium-high heat. Lightly spray the salmon with cooking spray and season with salt and pepper. Cook for 4–5 minutes on each side, or until the salmon flakes easily. Cut into chunks for taco filling.
  4. Warm the Tortillas:
