  • 2 cloves garlic, chopped
  • 2 (1.25 ounce) packages beefy onion soup mix
  • 2 tablespoons all-purpose flour
  • ¼ cup water, or as needed
  • 2 (8 ounce) bags frozen corn
  • 1 cup shredded fat-free Cheddar cheese
  • ¼ cup french-fried onions, or to taste

Directions:

  1. Prepare the Cauliflower Mash:
In a large pot, bring salted water to a boil and add chopped cauliflower. Cook for 10-12 minutes until tender.
Drain the cauliflower and return it to the pot. Add Greek yogurt, salt, and pepper. Mash until smooth and set aside.
  2. Cook the Ground Turkey Filling:

Add chopped garlic and cook for another minute until fragrant.
Stir in the beefy onion soup mix, flour, and water. Cook for 2-3 minutes until the mixture thickens.
  3. Combine the Filling:
Add frozen corn to the turkey mixture and cook for another 3-4 minutes until the corn is heated through.
  4. Assemble the Shepherd’s Pie:
Preheat your oven to 375°F (190°C).
In a 9×13-inch baking dish, layer the turkey mixture on the bottom, followed by a layer of cauliflower mash.
Sprinkle shredded fat-free cheddar cheese over the top of the cauliflower mash.
  5. Bake:
Bake in the preheated oven for 20 minutes or until the top is golden and bubbly.
Remove from the oven and sprinkle french-fried onions on top before serving.
