  • ½ cup water
  • ¼ teaspoon salt
  • 18 (1-ounce) squares bittersweet chocolate, chopped
  • 1 cup unsalted butter, cubed
  • 6 large eggs

Directions:

  1. Preheat oven to 300°F (150°C). Grease a 9-inch round cake pan and line the bottom with parchment paper.
  2. In a small saucepan, combine sugar, water, and salt. Heat over medium, stirring until the sugar dissolves completely. Remove from heat.
  3. Place the chocolate and butter in a heatproof bowl. Pour the hot sugar mixture over and stir until fully melted and smooth.
  4. Let the mixture cool slightly. Whisk in eggs one at a time, ensuring each is fully incorporated before adding the next.
  5. Pour the batter into the prepared pan and smooth the top.
  6. Set the cake pan into a larger baking dish and pour hot water around it, halfway up the sides (water bath method).
  7. Bake for 45–50 minutes, until the center is just set. Remove from water bath and cool completely.
  8. Chill in the refrigerator for at least 4 hours or overnight. Invert onto a plate and garnish as desired.
