Cucumber

Ingredients for this Cucumber Salad:

  • 1 (1 1/4 pound) English cucumber, sliced into 1/2-inch rounds
  • 1 teaspoon kosher salt
  • 2 tablespoons soy sauce
  • 2 tablespoons rice vinegar
  • 2 cloves garlic, minced
  • 1 1/2 teaspoons sugar
  • 1 1/2 teaspoons toasted sesame oil
  • 1 1/2 teaspoons chili oil

Directions:

  1. Place the sliced cucumber in a large mixing bowl.
  2. Sprinkle the kosher salt over the cucumber slices and toss to coat. Let the cucumber sit for about 10 minutes to draw out excess water.
  3. In a separate small bowl, whisk together the soy sauce, rice vinegar, minced garlic, sugar, toasted sesame oil, and chili oil until the sugar dissolves.
  4. After the cucumbers have released some water, drain any excess liquid and gently pat the cucumbers dry with paper towels.
  5. Pour the dressing over the cucumbers slices and toss to coat evenly.
  6. Let the salad sit for at least 10 minutes to allow the flavors to meld.
  7. Serve immediately, or chill in the fridge for up to an hour for a cooler, more refreshing experience.
