  • 1 cup dried rice noodles
  • ¼ cup chopped peanuts
  • ¼ cup freeze-dried vegetables
  • 2 tablespoons powdered peanut butter (such as PB2®)
  • 1 ½ teaspoons powdered chicken bouillon
  • 1 ½ teaspoons freeze-dried cilantro
  • 1 teaspoon chia seeds (Optional)
  • ¼ teaspoon salt
  • ¼ teaspoon garlic powder
  • ¼ teaspoon ground ginger
  • ⅛ teaspoon ground black pepper
  • 1 dash cayenne pepper (Optional)
  • 1 cup boiling water

Directions:

  1. In a resealable bag or container, combine the dried rice noodles, chopped peanuts, freeze-dried vegetables, powdered peanut butter, powdered chicken bouillon, freeze-dried cilantro, chia seeds (if using), salt, garlic powder, ginger, black pepper, and cayenne pepper (if using).
  2. Seal the bag/container tightly and pack for your trip or store for later use.
  3. When ready to eat, pour 1 cup of boiling water over the Backpacking Noodles mixture.
  4. Stir to combine, then cover and let it sit for 3-5 minutes, allowing the noodles to soften and the flavors to meld.
