Directions:

  1. Prepare the pancake mix: In a large bowl, combine the pancake mix with 1 1/3 cups of water. Stir until smooth, adding more water if needed to reach a slightly thick batter consistency.
  2. Cook the bacon: In a skillet, cook the bacon slices over medium heat until crispy and sturdy (not brittle). Drain excess grease on paper towels, then set aside.
  3. Prepare the bacon pancake sticks: In a separate large skillet, melt 1 tablespoon of butter over medium heat. Pour about 2 tablespoons of pancake batter onto the pan, then immediately place a piece of bacon on top of the batter. Let the batter cook around the bacon, forming a bacon pancake stick. Cook for about 2-3 minutes on each side until golden and crispy.
