  • 1 large garlic clove, minced
  • 1 teaspoon chipotle chile powder
  • 1 pinch salt

Burgers:

  • 1 pound ground beef
  • 5 eggs, divided
  • ¼ cup Italian seasoned bread crumbs

  • ¼ teaspoon salt
  • 4 slices sharp Cheddar cheese
  • Cooking spray
  • 4 hamburger buns, split
  • 4 lettuce leaves
  • 4 slices red onion, separated into rings
  • 4 tomato slices

Directions for this Chipotle Aioli Burger

  1. Make the Chipotle Aioli:
    • In a small bowl, combine the mayonnaise, minced garlic, chipotle chile powder, and a pinch of salt. Stir until smooth and well-mixed. Set aside.
  2. Prepare the Burgers:
    • In a large mixing bowl, combine the ground beef, 4 of the eggs, bread crumbs, minced garlic, ground coriander, black pepper, and salt. Mix gently until just combined, being careful not to overwork the meat.
    • Divide the mixture into 4 equal portions and shape each into a patty.
  3. Cook the Burgers:
    • Heat a large skillet or grill pan over medium-high heat and lightly coat with cooking spray.
    • Place the patties in the pan and cook for about 4-5 minutes on each side or until cooked through.
    • In the last minute of cooking, top each patty with a slice of cheddar cheese. Allow the cheese to melt as the burger finishes cooking.
  4. Fry the Sunny-Side-Up Eggs:
    • In a separate skillet, heat a small amount of oil over medium heat.
    • Crack one egg into the skillet, cooking until the whites are set but the yolk remains runny, about 3-4 minutes.
    • Repeat with the remaining eggs.
  5. Assemble the Burgers:
    • Toast the hamburger buns in the skillet or on a grill until golden brown.
    • Spread a generous amount of chipotle aioli on the bottom half of each bun.
    • Place a lettuce leaf, a cooked burger patty with melted cheese, a slice of tomato, and a ring of red onion on the bun.
    • Top with a sunny-side-up egg and the other half of the bun. Serve immediately.
