Easy Lemon Cheesecake

Ingredients for this Easy Lemon Cheesecake:

  • 300g Digestive biscuits or graham crackers, crushed
  • 115g (½ cup / 1 stick) butter, melted

For the Lemon Cheesecake:

  • 500g (2½ cups) full-fat cream cheese, room temperature
  • 100g (½ cup) caster sugar or granulated sugar
  • 3 large eggs, room temperature
  • 2–3 tbsp fresh lemon juice
  • Zest of 1 lemon
  • 1 tsp vanilla extract
  • 120ml (½ cup) full-fat sour cream, room temperature
  • 2 tsp cornflour (cornstarch)

For the Sour Cream Topping:

  • 120ml (½ cup) full-fat sour cream
  • Fresh blueberries, for serving
  • Icing sugar (powdered sugar), for dusting (optional)

Instructions:

1. Prepare the Crust:

  1. Preheat the oven to 170°C (340°F). Grease and line a 9-inch (23cm) springform pan.
  2. Crush the biscuits into fine crumbs using a food processor or rolling pin.
  3. Mix with melted butter until combined, then press the mixture firmly into the base of the pan.
  4. Bake for 8–10 minutes, then let it cool while you prepare the filling.

2. Make the Cheesecake Filling:

  1. Reduce the oven temperature to 150°C (300°F).
  2. In a large bowl, beat the cream cheese and sugar until smooth.
  3. Add eggs one at a time, mixing on low speed. Do not overmix.
  4. Stir in lemon juice, zest, vanilla extract, sour cream, and cornflour until just combined.
  5. Pour the batter over the cooled crust and smooth the top.

3. Bake the Cheesecake:

  1. Bake for 45–50 minutes, until the center is slightly wobbly but set at the edges.
  2. Turn off the oven and let the Easy Lemon Cheesecake cool inside with the door slightly open for 1 hour.
  3. Remove from the oven and refrigerate for at least 4 hours or overnight.

4. Add the Topping & Serve:

  1. Spread sour cream evenly over the chilled cheesecake.
  2. Garnish with fresh blueberries and dust with icing sugar, if desired.
