Directions:

  1. In a large, deep skillet or sauté pan, combine water, cherry tomatoes, garlic, olive oil, salt, and spaghetti. Bring to a boil over medium-high heat.
  2. Stir frequently and cook uncovered for 8–10 minutes, or until the pasta is al dente and the water has reduced to form a light sauce.
  3. Stir in the lemon zest, crushed red pepper, and greens. Cook for another 1–2 minutes until greens are wilted.
  4. Remove from heat and mix in the Parmesan cheese.
