  • 160ml (2/3 cup) apple juice (or orange juice)
  • 210g (1 1/2 cups) all-purpose flour
  • 190g (1 cup) brown sugar
  • 3/4 tsp cinnamon
  • 1/4 tsp nutmeg
  • 1/4 tsp ginger
  • 1/2 tsp baking powder
  • 1/4 tsp salt
  • 230g (1 cup, 2 sticks) unsalted butter, softened
  • 2 tsp vanilla extract
  • 3 large eggs

Directions

  1. Prepare the fruit:
    • In a saucepan, combine the dried fruit, orange zest, and apple juice.
    • Simmer over low heat for 5–7 minutes, stirring occasionally. Remove from heat and let cool completely.
  2. Preheat oven & prepare pan:
    • Preheat the oven to 160°C (320°F).
    • Grease and line a 9-inch (23 cm) round cake pan with parchment paper.
  3. Mix dry ingredients:
    • In a bowl, whisk together flour, cinnamon, nutmeg, ginger, baking powder, and salt.
  4. Cream butter & sugar:
    • In a large bowl, beat the butter and brown sugar until light and fluffy.
    • Add eggs one at a time, beating well after each addition. Stir in vanilla extract.
  5. Combine the batter:
    • Fold in the cooled fruit mixture.
    • Gently mix in the dry ingredients until just combined.
  6. Bake the cake:
