This Rocky Road Recipe is a simple, no-bake chocolate treat packed with Rolos, crunchy peanuts, fluffy marshmallows, and biscuit chunks. Perfect for sharing!

Ingredients for this Rocky Road Recipe
- 300g (2 cups) milk chocolate, chopped
- 200g (1⅓ cups) dark or semi-sweet chocolate (50–70% cocoa), chopped
- 250g (1⅔ cups) Rolo chocolates
- 65g (½ cup) roasted salted peanuts
- 60g (1 cup) mini marshmallows
- 100g (1 cup) plain biscuits or cookies, roughly chopped

Directions
- Prepare a pan: Line an 8-inch (20cm) square baking tin with baking paper, leaving a little overhang for easy removal.
- Melt the chocolate: In a large heatproof bowl, combine the milk chocolate and dark chocolate. Melt over a pot of simmering water (double boiler method) or in the microwave in 30-second intervals, stirring until smooth.
- Add the mix-ins: Allow the melted chocolate to cool slightly (to avoid melting the marshmallows), then stir in the peanuts, chopped biscuits, mini marshmallows, and most of the Rolos (reserve a few for topping).
- Mix and set: Gently fold everything together until evenly coated in chocolate. Pour the mixture into the prepared pan and spread it out evenly. Press in the remaining Rolos on top.
- Chill: Refrigerate for at least 2 hours, or until fully set.
- Slice and serve: Once firm, lift the Rocky Road out of the tin and slice into squares or bars. Enjoy!
