Cookies:

  • 115g (½ cup) unsalted butter, room temperature
  • 150g (¾ cup) caster or granulated sugar
  • 1 teaspoon vanilla extract
  • 1 large egg, room temperature
  • 245g (1¾ cups) plain or all-purpose flour
  • ¼ teaspoon baking powder
  • ¼ teaspoon baking soda
  • ¼ teaspoon salt
  • Zest of 1 large lemon (or 2 small ones)
  • 30ml (2 tablespoons) fresh lemon juice
  • 35g (¼ cup) white chocolate chips (optional)

Sugar Coating:

  • 100g (½ cup) granulated sugar
  • 65g (½ cup) powdered sugar, sifted

Instructions

  1. Preheat & Prepare:
    Preheat your oven to 180°C (350°F). Line a baking tray with parchment paper.
  2. Cream Butter & Sugar:
    In a large bowl, beat the butter and caster sugar until light and fluffy. Mix in the vanilla extract, egg, lemon zest, and lemon juice until well combined.
  3. Combine Dry Ingredients:
    In a separate bowl, whisk together the flour, baking powder, baking soda, and salt. Gradually add to the wet ingredients, mixing until just combined. Fold in white chocolate chips, if using.
  4. Chill the Dough:
    Cover and refrigerate the dough for 30 minutes to make it easier to handle.
  5. Coat in Sugar:
    Scoop tablespoon-sized portions of dough and roll into balls. First, coat each ball in granulated sugar, then generously roll in powdered sugar.
  6. Bake:
    Arrange on the prepared baking tray, spacing them 5 cm (2 inches) apart. Bake for 10-12 minutes, or until the edges are set but the centers remain soft. These Soft Lemon Cookies will have a delicate crinkled top.
