  • 2 cups chicken broth
  • 1 cup farro
  • 2 cups chopped kale
  • ½ cup crumbled reduced-fat feta cheese

Directions:

  1. Cook the farro: In a medium saucepan, bring chicken broth to a boil. Stir in farro, reduce heat, cover, and simmer for 25–30 minutes or until farro is tender. Drain any excess liquid if necessary.
